With gas stoves, you have to wait a bit until the heat is at its full power. You can actually test this with a pot of water. Heating it with a gas stove takes longer than with an induction stove. So if you want instant heat, induction is the way to go.
Induction stoves are also waste-free and are 70% more energy-efficient than their gas and electric counterparts. An induction cooktop only heats the cookware instead of the whole surface.

One of the reasons we always suggest induction cooktops when we do a kitchen remodeling is that they are actually safer to use. When you take the pan off the burner, the induction unit will automatically close. In some cases, you can actually touch the surface of the burner without getting scorched. This is an important feature, especially if you have small children with very curious hands.
Cleaning a cooktop isn’t something most people really look forward to. Gas stoves, in particular, are fairly difficult to clean – especially when they’re already full of grime and muck from previous cooking sessions. With an induction cooktop, food can’t get baked into the surface since it maintains a relatively cool temperature even when you’re cooking.
This means that cleaning the surface of the cooktop is also easier to do. All you really need is damp cloth, give it a few wipes, and you’re done.
